Most trucks try to fix food cost by cutting portions. Here is the order of operations that actually works.

Food cost is not one number, it is a stack of decisions: what you buy, what you charge, what you waste, and what you actually serve. Cutting portions attacks the one variable your customers notice most, which is why it usually costs you more in repeat visits than it saves in product.

Start with measurement. Until you know theoretical cost per item and compare it against actual usage, every change is a guess. A weekly count plus invoice capture turns that guess into a variance number you can chase.

Then work the top five items by volume. A two percent improvement on your best seller beats a perfect fix on something you sell twice a week.

Finally, price with intent. If beef moved 18 percent, your menu should move too — in cents, on the items where customers are least price sensitive.
